Duck Eggs & Tuna

  • 2 Duck eggs (alternatively, 3 free range chicken eggs can also be used)
  • 1 can of tuna (mackerel and sardines are also great choices)
  • 1 tbsp butter
  • 1 tbsp crumbled feta cheese
  • Oregano
  • Himalayan salt
  • (optional) anchovies

Melt the butter in a large pan, add tuna, feta and anchovies (if you’re using them). Stir fry for 1-2 minutes. Crack the eggs and fry them alongside. Add oregano and salt to taste. Enjoy!

This is an alternative breakfast to egg and bacon. However, if you prefer the traditional version and have access to organic uncured bacon, go for it!
