Paleo-Keto Pancakes

Makes 12 pancakes (2 servings)

  • 3 duck eggs or 2 regular eggs
  • 2 scoops bovine collagen powder (if don’t want to go strictly paleo, 1 scoop regular whey protein will do)
  • 3 tbsp coconut flour
  • pinch Himalayan salt
  • stevia to taste
  • 1 tbsp coconut oil
  • fresh or frozen berries to garnish
  • 1 tsp true Ceylon cinnamon
  • (optional) 2 tbsp crumbled nuts and seeds (Brazil nuts, pecan nuts, walnuts, macadamia nuts, sunflower seeds, chia seeds)
  • (optional) coconut flakes
  • (optional) raw cacao nibs

Crack the eggs in a bowl and add the rest of the ingredients except for coconut oil and berries. Combine until reaching a pancake-like batter. Set aside for 20 minutes.

Heat up 1/2 tbsp coconut oil in a pan, skillet or pancake griddle. Use a spoon to pour 6 pancakes in the hot pan/skillet/griddle and cook thoroughly (about 4-5 minutes on each side). Use the other half of batter straightaway to make the second serving with the other 1/2 tbsp coconut oil, or place it in an airtight container and refrigerate it, if you’re planning to use it on the next day.

Serve with fresh or frozen berries as toppings. Enjoy!
