Smoked Mackerel and Quinoa Salad

  • 1 cup cooked quinoa
  • 150g smoked mackerel
  • 1 bell pepper (red or yellow)
  • 3 baby gem lettuce leaves
  • 1 tsp pumpkin seeds
  • 1 tsp sunflower seeds
  • 5 cherry tomatoes
  • freshly squeezed lime juice
  • sea salt
  • 1 tsp EVOO
  • fresh parsley
  • (optional) sprouts of choice
  • (optional) 1/4 sweet potato (steamed)
  • (optional) sauerkraut or kimchi
  • (optional) 1 soft-boiled duck egg

Chop and slightly steam or sauté pepper and tomatoes. Combine them with the rest of the ingredients in a large bowl. Enjoy!
